Meatballs with gingerbread sauce, duchess potatoes & brussels sprouts

Here we have a very delicious and festive recipe for you - and it's vegan! It's perfect for the festive season. Have a spoon ready, because the gingerbread sauce also tastes simply heavenly on its own.  

Ingredients

  • Easy Mix Meatballs
Duchess potatoes:
  • 300g potatoes (floury cooking)
  • 100ml vegetable milk
  • 1 tbsp vegan butter 
  • Salt & pepper
  • Nutmeg 
Gingerbread sauce:
  • 1 carrot
  • ¼ celery root
  • 2 onions
  • 1 clove of garlic
  • 2 tbsp tomato paste
  • 200ml red wine
  • 1l vegetable stock
  • 100g gingerbread, natural
  • For seasoning: salt, pepper, bay leaves, juniper berries, thyme, rosemary
Brussels sprouts: 
  • 200g Brussels sprouts
  • 2 tbsp olive oil 
  • Salt & pepper 
  • Pinch of sugar

Preparation

Meatballs:
  • Mix and cool the Easy Mix Meatballs according to instructions on the packaging.
  • After the cooling time: form the meatballs and fry them in a pan with a little rapeseed oil until browned to your liking.  
Gingerbread sauce: 
  • Brown the vegetables in a pan with a bit of oil, season with salt and pepper.
  • Add the tomato paste and fry until hot.
  • Deglaze with some red wine and let it boil down. Add some more wine and let it boil down again. Repeat until the wine has boiled down completely.
  • Then add the vegetable stock, the spices and the gingerbread. Simmer for 2 hours.
  • Depending on the desired consistency, pour through a sieve if necessary. After the cooking time, season again and season to taste. 
Duchess potatoes and Brussels sprouts:
  • Cook the mashed potato. Fill this into a piping bag with a large star nozzle and press rosettes onto a baking tray lined with baking paper.
  • Bake at 180 degrees for about 10 minutes, depending on how brown you want them.
  • Wash and clean the Brussels sprouts, cut off the stalk and halve them. Mix in a bowl with olive oil and spices.
  • Put the mixture on a baking tray lined with baking paper and bake at 200 degrees for about 15 minutes. Serve everything on a plate and enjoy.
